Spanton Hospitality started during COVID when hospitality veteran, Dave Spanton, saw an opportunity to save the historic Piccolo Bar in Kings Cross and turn it into an Italian-style aperitivo bar. In 2022, another opportunity to save an historic café in Potts Point arose, which resulted in the revitalised Bar Hernandez.

For more than 25 years, Dave and his wife Amy owned Spanton Media Group (publishing 285 editions of Australian Bartender Magazine, hosting Sydney Bar Week and the 23 years of the Annual Australian Bar Awards) In 2024, they sold the media business to Yaffa Media and the legacy continues.

Their extensive history with, and passion for, the bar industry gives them a unique insight into running quality venues with great products and warm hospitality.
